One of our longest wine relationships here at Nordo and the Knife Room has been with Minimus and Craft Wine Company, the adventurous, mission-driven wine collective in Carlton Oregon. We worked with Minimus to make the Onerus Red Blend as well as the Jitterbug Perfume wine. Their approach to winemaking is not just a process, but “a concept, a drink tank, a place to voice our convictions and to ask the questions that need to be asked.” Rather than just make Pinot Noir and Pinot Gris, Minimus focuses on wines that employ rare grape varietals, such as Kerner, Muller-Thurgau, and Mondeuse, among others. For this incredible tasting experience, we will try five different Minimus Wines, each distinct in its own way.
